This instant suji idli stuffed with soft potato masala is a quick twist on the classic — fluffy on the outside and flavorful inside! Perfect for breakfast or an evening snack.

🧂 Ingredients:

For Idli Batter:
• Suji (semolina) – 1½ cup
• Curd – ¾ cup
• Water – 1 cup

For Aloo Masala:
• Oil – 3 tbsp
• Mustard seeds – 1 tsp
• Cumin seeds – 1 tsp
• Curry leaves – 2 tbsp
• Onion – 1 medium, chopped
• Turmeric – 1 tsp
• Chilli powder – 1 tsp
• Mashed potatoes – 3 medium
• Salt – as per taste

Before Steaming:
• Eno – 1 packet
• Water – 2 tbsp

Method:

1. In a bowl, mix suji, curd, and water. Let it rest for 10 minutes.
2. For aloo masala, heat oil, add mustard seeds, cumin, curry leaves, and onions.
Add turmeric, chilli powder, then mashed potatoes and salt. Mix well and keep aside.
3. Add Eno, water, and salt to the rested batter. Mix gently in one direction.
4. Brush oil in the idli molds. Pour batter, add a spoon of potato masala, and cover with more batter.
5. Steam for 15 minutes, cool slightly, and unmold.

Soft, fluffy instant suji idlis stuffed with potato masala are ready to serve! 🥰
