15 Minute Focaccia Sandwich 🥪 Layered with fresh basic chutney, burrata and tomatoes that are marinated in salt, pepper, olive oil and balsamic vinegar. This is absolutely perfect for a quick lunch or a light dinner!

Ingredients:
1 small Focaccia bread
Burrata
Basil chutney (recipe below)
Tomatoes marinated in salt, pepper, olive oil and balsamic vinegar

Chutney:
1/4th cup Basil
2 cloves garlic
1/4th cup coriander
3-4 cashews- soaked in hot water
1 tbsp lime juice
2 spicy green chillies
Salt & Pepper to taste

Process:
– Soak the cashews in hot water for 10-15 minutes
– Add everything to a blender – basil, coriander, garlic, cashews, lime juice, salt & pepper and blend till slightly coarse
– Pre heat the oven to 200 C
– Slice the focaccia in half , drizzle with olive oil and toast in the oven for 6-7 minutes
– Toss the sliced tomato in salt, pepper, extra virgin olive oil and balsamic vinegar
– To assemble, start with the bread, spread the chutney, add the tomatoes & burrata
– Serve and enjoy!
