This is the easiest Mediterranean chickpea salad you’ll ever make! Just dump everything in a bowl for a fresh, healthy lunch or side dish. Perfect for a quick meal prep, this salad is packed with protein and flavor. (And yes, my cat tried to stop me from making it!)

WRITTEN RECIPE

Salad Ingredients:
• 1 can (15 oz) Chickpeas, drained
• 1/2 Red Onion, diced
• 2 Tomato, chopped
• 2 Cucumber, chopped
• Feta Cheese, crumbled
• Flavored Olives (black and white)

Dressing:
• Extra Virgin Olive Oil
• Black Pepper
• Minced Garlic
• Salt

Instructions:

1. Add all the salad ingredients to a large bowl.
2. Drizzle the dressing ingredients on top.
3. Toss everything together until well combined. Enjoy!
