🌿 A light, aromatic and nutritious Veg Pulao made with fresh vegetables, whole spices and basmati rice. Perfect for lunchboxes, family meals or easy dinner!

🌟 INGREDIENTS
• 3 cups basmati rice (washed & soaked for 30 mins)
• 2–3 tbsp oil/ghee
• Whole spices (bay leaf, cloves, cinnamon, cardamom)
• 1 onion (sliced)
• 1–2 green chillies
• Fresh mint leaves
• Veggies: carrots, potatoes, green peas
• 1 tbsp ginger garlic paste
• Salt (as needed)
• 1 tsp garam masala
• 4.5 cups water
• Saffron milk / food color mixed in water
• Fresh coriander leaves

🔥 PROCESS
1. Heat oil or ghee in a vessel.
2. Add whole spices and let them release aroma.
3. Add sliced onion, green chilli and mint leaves. Sauté well.
4. Add chopped veggies (carrots, potatoes, peas) and sauté for 2–3 minutes.
5. Add ginger garlic paste, salt and garam masala. Mix well.
6. Pour 4.5 cups water and bring it to a boil.
7. Add the soaked basmati rice and cook on low–medium flame for 20 minutes.
8. Drizzle saffron milk or food color water on top for a biryani-style look.
9. Add coriander leaves, cover and rest the pulao for 10 minutes.
10. Fluff gently and serve hot!
