Ingredients
· 1 (15oz) can chickpeas
· 2-4 garlic cloves
· 1 jalapeno
· ¼ cup fresh parsley, chopped
· ½ cup tahini
· 2 tablespoons olive oil
· ½ – 1 teaspoon salt, adjust to taste
· 1 teaspoon black pepper, adjust to taste
· 2 tablespoons fresh lemon juice
· Water or reserved liquid from can of garbanzo beans (optional)
· 3 pita bread, cut into triangular pieces
Method
Step 1: Preheat the oven to 375 degrees F.
Step 2: In a food processor, add the chickpeas and process until course in texture.
Step 3: Add the garlic, jalapeño, and parsley; blend until combined. Pour in the tahini, olive oil, lemon juice, and season with salt and pepper; continue processing until smooth and creamy. If the hummus is too thick, you can add either water or some of the liquid from the can of the garbanzo beans for a thinner consistency.
Step 4: Cut each pita bread in quarters and then in half to make 24 triangles. Place the pieces of pita bread on a sheet pan and brush both sides lightly with olive oil followed by a sprinkle of salt and pepper. Bake for about 10 minutes or until crispy, turning once during the baking process.
