A crisis this week made it a tough one. My attempt at a comforting treat. Recipe in description.

Recipe:

🫐🍓Healthy Berry Crumble gluten-free
Topping
1 large grated apple
1 cup rolled oats
2/3 cup almond flour
(1.5 tbsp flaxseed meal-optional)
1 tsp cinnamon
2 tbsp date syrup or maple syrup
(Optional drizzle of olive oil)

Filling:
4 cups frozen berries
4 finely chopped dates
2 tbsp chia seeds
2 tsp arrowroot or cornstarch
1 tsp lemon juice

Instructions:
Mix topping ingredients well. Taste. Adjust date syrup to taste. Set aside. Mix filling in small baking dish. Layer topping. Bake 350°F for 40 minutes. Serve with plant-based yogurt and drizzle of maple or date syrup.
