For Semolina Batter

Semolina (Suji) – 1 ½ cups

Curd – ½ cup

Salt – ¼ tsp

Water – 1 cup (or as required)

Eno – 1 packet
or Baking soda – ½ tsp

Water – 2 tbsp (to activate)

For Potato & Vegetable Filling

Oil – 1 tsp

Mustard seeds – ½ tsp

Cumin seeds – ½ tsp

Asafoetida (Hing) – a pinch

Green chillies – 2, finely chopped

Curry leaves – few

Onion – 1, finely chopped

Mixed vegetables – ¾ cup
(carrot, capsicum, peas)

Turmeric powder – ¼ tsp

Kashmiri red chilli powder – ½ tsp

Boiled & mashed potatoes – 3 medium

Salt – to taste

Fresh coriander leaves – 2 tbsp, chopped

For Tempering (Optional Final Step)

Oil – 1 tsp

Mustard seeds – ½ tsp

Curry leaves – few

Kashmiri red chilli powder – a pinch
