Ingredients list below

Chicken Enchilada Bake
3 peppers
2 red onions
1/2 tsp chilli flakes
can of sweetcorn
Can of black beans
4 chicken breasts
pasatta
2 tbsp tomato purree
2 garlic cloves
2 tsp cumin
1/2 tsp sweetener
Mozzarella and salad to serve

Reheat for 20 minutes covered, remove, add cheese and back in the oven for another 10 mins. Check it’s hot throughout before serving.

Lasagne Soup

500g lean mince
2 onions
1 pepper
1 carrot
2 garlic cloves
1 tbsp tomato puree
Salt & pepper
1 tsp each of garlic powder, oregano and thyme
pasatta
1.5 litre beef stock
200g lasagne sheets
handful of spinach

Reheat on the hob for 20 minutes.

Vegetable Curry
300g cauliflour
350g courgette
1 aubergine
2 garlic cloves
red onion
2 tbsp tomato puree
2 tbsp curry paste
light coconut milk
salt and pepper
1tsp garam masala

Put everything apart from the garam masala in the slow cooker for 7-8 hours on low. Add the garam masala before serving. Serve with rice.

Chicken & Red Pepper Stew

600 chicken breasts
150g red lentils (rinsed)
red onion
2 garlic cloves
2 carrots, sliced
1 red pepper
tin chop tomatoes
400ml chicken stock
1 tbsp tomato puree
1 tsp each of ground cumin, smoked paprika, thyme, turmeric
Season with salt and pepper

Put all ingredients into a slow cooker and cook on slow for 6-7 hours or high for 3-4. Serve with potatoes and veggies.

Preppable Chicken Filling
1 chicken
3 tbsp yoghurt
1/2 tsp dijon mustard
1 spring onion
parsley
spinach
1/2 lemon

Store for 3-4 days in a sealed container in the fridge.
