This cottage cheese alfredo is my go-to when I want something cozy, creamy, and still super doable on a busy weeknight. It blends up in seconds, comes together in about 15 minutes, and tastes way more indulgent than the ingredient list lets on.
Made with cottage cheese, parmesan, and garlic for that classic alfredo flavor… but lighter and perfect for meal prep, too. I love making a batch and having leftovers ready for the week (future me is always grateful).

8 oz fettuccine or pasta of choice1 cup cottage cheese (I use Good Culture 2%)¼ cup grated parmesan cheese2 tbsp butter or olive oil2 cloves garlic (minced)¼ cup milk or oat milk (add more as needed to thin)Salt + pepper (to taste)½ tsp lemon juice (optional)chopped parsley (garnish)Bring a pot of salted water to a boil. Cook pasta until al dente. Reserve ½ cup of pasta water, then drain.In a blender or food processor, combine cottage cheese, parmesan, milk, salt, pepper, and lemon juice. Blend until ultra-smooth and creamy, it should look like traditional Alfredo sauce.In a skillet, melt butter over medium heat. Add garlic and sauté 30–60 seconds until fragrant.Lower the heat, then pour in the blended cottage cheese sauce. Stir until warmed through do not boil (it can separate).Add the cooked pasta and a splash of reserved pasta water. Toss until glossy and coated. Adjust consistency with more water if needed.Top with extra parmesan, black pepper, and parsley.
