Ingredients
• 1 large egg
• 1 low-carb or carb-free tortilla
• ¼ cup shredded mozzarella cheese
• ½ avocado, sliced
• Calabrian chili oil (to taste)
• Optional: salt & pepper

Instructions
1. Heat a nonstick pan over medium heat.
2. Crack one egg into the pan and cook sunny side up.
3. While the egg is cooking, place the tortilla directly on top of the egg.
4. Carefully flip so the tortilla is on the bottom and the egg stays intact.
5. Sprinkle mozzarella over the egg and cover the pan briefly so the cheese melts without overcooking the yolk.
6. Slide onto a plate.
7. Top with avocado and drizzle with Calabrian chili oil.
8. Fold, squish… and enjoy the runny yolk magic
