Makes 4 muffins

🧁 RECIPE

Ingredients – Muffins
• 1 cup oats flour
• ¼ cup unsweetened cocoa powder
• ⅓ cup ripe banana mash
• ⅔ cup milk
• 3 tbsp jaggery powder
• ½ tbsp baking powder
• 1 tsp baking soda
• 1–2 tsp vanilla essence
• Pinch of salt

Method
1. In a bowl, mix oats flour, cocoa powder & salt.
2. Add banana, milk, jaggery & vanilla. Whisk well.
3. Add baking powder & baking soda last and mix gently.
4. Fill greased muffin moulds ¾ full.
5. Preheat a heavy pan with salt on low flame for 10 minutes.
6. Place moulds inside, cover and cook on low flame for 18–22 minutes.
7. Cool slightly before removing.

Chocolate Cream Cheese Frosting (Optional)
• 4 tbsp cream cheese (room temperature)
• 3 tbsp melted dark chocolate
• 2 tbsp warm milk
• 1 tbsp jaggery powder
• ½ tsp vanilla essence
• Pinch of salt

Whisk everything till smooth and glossy. Spread on muffins.
