RECIPE

“Rice” Crispy Treats

INGREDIENTS

½ cup date syrup
½ cup + 2 tbsp raw cashew butter ( this is my preferred butter to use, but these can be done with other nut or seed butters)
2 tsp vanilla bean powder ( or 3 tsp vanilla extract)
2 ½ cups of puffed, popped or crispy quinoa (these can be found online)
Optional:
Generous pinch of salt
1 tbsp ground golden flaxseed or chia seeds

INSTRUCTIONS

Line an 8×8 inch pan with parchment paper.

Add date syrup, nut butter, vanilla, and optional salt and ground flaxseeds to a bowl. Mix to combine.

Add the puffed/crispy quinoa to the bowl and mix until fully incorporated into the nut butter and date syrup mixture.

Transfer the mixture to the parchment-lined pan and press evenly.

Put the pan in the freezer for 1 hour to harden. Remove and cut into squares.

Store in the freezer. I find these best when eaten straight from the freezer. Enjoy!
