Makes 4 servings
Ingredients:
โข Top sirloin steak
โข Mini gold potatoes
โข Asparagus, corn, cherry tomatoes
โข Red onion + arugula
โข Fresh chimichurri (parsley, cilantro, olive oil, vinegar, garlic)
Directions:
Roast potatoes and asparagus until golden.
Cook steak to your liking, rest, then slice.
Mix chimichurri and chill.
Assemble greens, veggies, and steak. Toss with chimichurri and lemon when ready.
