Quick & Easy Prawns–Vegetable Soup 🍲 (High-Protein & Light)

Ingredients

Bok choy – 4 leaves (chopped)

Shiitake mushrooms – 125 g (sliced)

Ginger – 1 inch piece, julienned

Garlic – 5 large cloves, minced

Green onions – 2, sliced

Prawns – 200 g, cleaned

Tempayy / any dumplings – 4–5 pieces

Chilli oil – ½ tbsp (optional)

Salt – to taste

Water – 4 cups

Method

1. In a pot, add 4 cups water and bring it to a boil.

2. Add ginger, garlic, green onions, bok choy and shiitake mushrooms.

3. Season with salt and add chilli oil (if using).

4. Cook on high flame until the vegetables turn tender.

5. Add the prawns and dumplings to the soup.

6. Continue cooking on high heat for about 25 minutes, until the prawns are fully cooked and the broth becomes flavourful.

7. Taste and adjust salt. Serve hot.
