RECIPES:
Deli Dill Pickle Dressing (McDougall Mom: https://www.instagram.com/mcdougallmom?utm_source=ig_web_button_share_sheet&igsh=ZDNlZDc0MzIxNw==)
Ingredients:
1/3 cup soy milk (oat milk could be a good and lighter sub)
1/3 cup dill pickle juice
1/2 of a dill pickle
1/2 cup raw cashews (soaked in boiling water, drained, rinsed)
3/4 tsp onion salt or Kinders French onion seasoning or dried onion flakes
1/4 tsp freeze dried chives
1/4 tsp minced dried onion
Directions:
Add everything to a blender except for the dry chives and dried minced onion. Blend into mixed. Pour into a jar and add the dried chives and minced dried onion.
Ellen’s Notes:
To reduce the fat, I halve the amount of cashews and substitute white creamy beans (like cannellini beans) for the other half of the cashews.
Cheezy Chickpeas
Ingredients:
1 lb dried chickpeas, cooked
3 – 5 tbsp nutritional yeast
1 – 2 tbsp hot sauce (I like Cholulu chipotle flavor)
handful celery seeds
sprinklie of cayenne powder
1/2 – 1 c. aquafaba or veg stock
s+p to taste
Directions:
Put cooked chickpeas in a bowl. Add remaining ingredients and gently combine.
