Simple Healthy Vegetable Salad
Ingredients (Salad)
• 1 cup red cabbage, shredded
• 1 cup green cabbage, shredded
• 1 cup carrot, shredded
• ½ cup onion, thinly sliced
Ingredients (Dressing):
• 2 tbsp sweet chili sauce
• 1 tbsp olive oil
• 2 tbsp rice vinegar
• ½ tbsp lime juice
• ½ tsp soy sauce
• ¾ tsp salt (adjust to taste)
• Fresh coriander leaves, chopped
• Roasted sesame seeds
Process:
1. In a bowl, add the sweet chili sauce, olive oil, rice vinegar, lime juice, soy sauce, salt, chopped coriander leaves, and roasted sesame seeds. Mix well to combine.
2. In a large bowl, add the shredded red cabbage, green cabbage, carrot, and onion.
3. Pour the dressing over the vegetables and toss well until everything is evenly coated.
4. Refrigerate for about 15 minutes to let the flavors blend.
5. Serve fresh and enjoy your crunchy vegetable salad.
