Healthy Chickpea And Tofu Salad
The ingredients are just a guideline and can be adjusted to your taste.
• ½ cup split yellow moong dal
• 6-8 spinach leaves
• 1/2 cup cucumber, cut into bite sizes
• 1/2 cup tomato, cut into bite sizes
• ¼ cup red bell pepper, cut into bite size pieces
• 2 tablespoons grated carrots
• 1 sliced radish in round
• ¼ cup feta cheese
• 1 tablespoon pumpkin seeds
• 1 tablespoon sunflower seeds
For Dressing
• 3 tablespoons of olive oil
• 2 teaspoons of ginger juice
• ¼ teaspoon black pepper
• 1 tablespoon lemon juice
• ½ teaspoon yellow mustard seeds powder
• 2 teaspoons of sugar
