Today, I am up with one of the most healthy salad recipe – Sprouted matki and veggie salad, its low in calories, have fiber and B vitamins, and deliver a boost of vitamins C and K.

Preparation Time – 15 – 20 mins
Serves – 3 to 4 ppl
Ingredients:-
– 200 grams sprouted matki / moth bean / Turkish gram – You need to keep the beans in water for 5 to 6 hrs. After 5 to 6 hrs remove the water and keep the soaked beans tighted in a clean cloth overnight. So as to get the sprouted beans.
– 1/2 cup finely chopped onion
– 1/2 cup finely chopped tomato
– 1/2 cup finely chopped cucumber
– 1/2 cup finely chopped carrot
– 1/2 cup finely chopped cabbage
– Salt as per taste
– 1 tea spoon chaat masala
– 1/4 tea spoon black pepper powder
– 1/2 cup finely chopped coriander
– 1/2 lemon – For lemon jucie
Ingredients for Tadka :- (Optional)
– 1 tea spoon olive oil – I have taken olive oil (You can even take any cooking oil or purified butter/ghee)
– 1/4 tea spoon mustard seeds/Raee
– 1/4 tea spoon cumin seeds/Jeera
– 1/8 tea spoon asafetida/Hing
– Finely chopped coriander
