Whipped Tofu with cherry tomatoes:
Calories for entire recipe: 489, Protein: 36.1g, Carbs: 37.4g, Fat: 23g
300g (10.5z) soft silken tofu (1 brick)
120g (4.2 oz) extra firm tofu
1 tsp white miso paste
1-2 tsp lemon juice
1-2 tsp maple syrup
1 tsp garlic powder
salt
1 cup diced cherry tomatoes
1 tsp extra virgin olive oil
1 tbsp balsamic vinegar
1 tbsp chopped fresh basil
salt per taste

Dumpling Bake: Makes 4 servings
Calories for each serving: 498, Protein: 40g, Carbs: 34g, Fat: 23.7g

2 cups chopped bok choy
4 cloves minced garlic
1 tsp grated ginger
1 tsp chili crisp oil (adjust per preference)
For sauce:
300g (10.5z) silken tofu (can use more if you like)
2 cups hot water for blending & for extra sauce
1 tbsp red thai curry paste
1 tbsp low sodium tamari
1 tbsp maple syrup
1 tbsp rice vinegar
for toppings: 1 tsp chili crisp oil, squeeze of lime juice, fresh green onions & some sesame seeds

Tofu scramble with blended silken tofu

Lunch: Calories Per 2 Sourdough bread slices, 290g Tofu scramble, 2 tbsp Ajvar
513, Protein: 44g, Fat: 23g, carbs: 34g
Blended Tofu:
half a brick of soft silken tofu
1 tsp corn starch
1/4 tsp turmeric powder
2 tbsp nutritional yeast
1/4 tsp black pepper
Salt per taste
Can add black salt for eggy flavor
1 tsp garlic powder (optional, I didn’t add any)
juice of half a lemon
lemon zest
110 ml unsweetened soy milk
1 brick of extra firm tofu – thinly sliced and fried on each side for 3-4 minutes with 1/2 tsp olive oil
1/4 chopped green onions
