Do you ever crave a crispy, cheesy panini but want to avoid the “bread coma” that usually follows? 🥪
The biggest problem with traditional sandwiches is the refined flour—it’s quick energy that leads to a big crash. I used to struggle with this until I started making these healthy veggie panini wraps using just a few simple pantry staples. It’s the perfect solution for anyone who wants that satisfying crunch without the heavy carbs.
This is a great healthy lunch for beginners because it’s high in protein, fiber, and packed with hidden veggies. Plus, using a sandwich press makes it extra crispy and delicious in just minutes!
Here is the ingredients list:
• 2 Eggs
• A handful of Grated carrots
• 7-8 tbsp Oat flour (keep adding until you get the mixture as in the video
• 1 tbsp Chia seeds
• 1 tbsp Tomato sauce or ajvar (vegetable spread)
• 1 slice Cheese
• 2-3 slices Pepperoni or salami
• Himalayan salt (or any salt) and chilli powder
How to make it:
• Whisk your eggs and mix in the grated carrots, oat flour, and chia seeds until you have a thick “batter.”
• Line your sandwich press with parchment paper, pour the mixture on, and spread it out thin.
• Close and cook until firm and slightly golden.
• Spread on your sauce, add the cheese and pepperoni, and fold it in half.
• Press it one more time until the cheese is perfectly melted and the outside is crispy.
It’s the ultimate “guilt-free” comfort food! 🍕🔥
