Ingredients:
• Whole wheat pasta – 1 cup
• Pumpkin – ½ cup (boiled)
• Cashews – 8–10 (soaked)
• Onion – 1 (cut into squares)
• Capsicum – 1 (cut into squares)
• Sweet corn – ½ cup (boiled)
• Ghee – 1 tsp
• Salt – as per taste
• Oregano – ½ tsp
• Black pepper – ½ tsp
• Chilli flakes – ½ tsp
Method:
1. Boil pumpkin & soaked cashews together, then grind with a little water + salt → creamy healthy white sauce.
2. Boil whole wheat pasta with 1 tbsp oil & salt.
3. Heat ghee in a pan, sauté onion, capsicum & sweet corn.
4. Add boiled pasta & white sauce, sprinkle oregano, black pepper & chilli flakes. Mix well & serve hot.
