Ingredients
Chicken Marinade
• 1 whole chicken breast (or 2 cups shredded chicken)
• Salt to taste
• 2 tbsp soy sauce
• 1 tbsp green chilli sauce
• ½ tsp black pepper
• 2 tbsp garlic (finely chopped)

Vegetable Marinade
• 1 cup shredded cabbage
• ½ cup shredded carrots
• ½ cup capsicum (optional)
• Salt to taste
• 1 tsp vinegar
• 1 tbsp sugar

Spring Roll Sheets
• 1½ cups maida (all-purpose flour)
• ½ cup cornflour
• Salt to taste
• 2 tbsp oil
• 1 egg
• Water (to make a thin batter)

For Frying
• Oil for deep frying

Method

1. Marinate the Chicken
• Mix chicken with salt, soy sauce, green chilli sauce, black pepper, and garlic.
• Marinate for 20–30 minutes.

2. Marinate the Vegetables
• Mix cabbage, carrots, and capsicum with salt, vinegar, and sugar.
• Keep aside for 10 minutes.

3. Make Spring Roll Batter
• In a bowl mix maida, cornflour, salt, oil, and egg.
• Add water gradually to make a thin, smooth batter (pouring consistency).

4. Make Spring Roll Sheets
• Heat a non-stick pan.
• Turn off the heat, pour a thin layer of batter, and swirl.
• Put back on low flame until the sheet leaves the sides.
• Remove carefully and repeat.

5. Cook the Filling
• Fry the marinated chicken until cooked.
• Shred the chicken.
• Stir-fry vegetables in a pan for 2–3 minutes.
• Mix vegetables with shredded chicken.

6. Assemble
• Place filling on a sheet.
• Fold sides and roll tightly.

7. Fry
• Deep fry in medium-hot oil until golden and crispy.
