Scones:

Ingredients:

1 cup plant milk
3 tbsp cashew butter
2 tbsp apple cider vinegar
2 cups almond flour
1 cup oat flour
¾ cup date sugar
6 tbsp arrowroot powder
4 ½ tsp baking powder
Optional:
½ tsp cinnamon
½ tsp salt

Additions:
½ cup of chocolate chips OR
½ cup berries of choice

Optional icing:

½ cup soaked cashews
½ cup plant milk
½ tsp vanilla extract

Instructions

Preheat the oven to 425F. Line a baking sheet with parchment paper.

To a cup (or blender) add, plant milk, cashew butter, and apple cider vinegar. Mix or blend until smooth and combined.

In a bowl, combine the oat flour, almond flour, arrowroot powder, baking powder, optional salt, and berries or chocolate chips.

Pour the wet ingredients into the dry ingredients. Mix just until combined. It will make a wet dough.

Place the dough onto a parchment paper and using wet hands, shape into a 1 to 1 ¼ inch thick disc.

Cut into six equal triangular pieces.

Place the pieces on the parchment-lined baking sheet.

Bake for 12-14 mins. Remove from the oven and cool for 5-10 minutes.

Optionally prepare the icing by combining the ingredients in a blender and blending until completely smooth. Use more or less plant milk for thinner or thicker icing.

Top the scones with optionally icing and enjoy!
