Taco salad FULL RECIPE
Makes 4-5 salads
Ingredients:
1 bag shredded broccoli or cabbage
1 can black beans
1 cup dried TVP + 1 cup water/broth
1 bell pepper, chopped into bite sized pieces
1 avocado (or guacamole)
1-2 cups cheddar cheese, shredded
Tostitos
Salsa & Mayo
Directions:
1. Rehydrate your TVP. Add 1 cup dry TVP to a small bowl. Add 1 cup hot water or veggie broth, and some taco seasoning. Let sit while you get the other ingredients ready.
2. Chop the bell pepper and avocado.
3. Divide the shredded broccoli, bell pepper, TVP, black beans, avocado, and cheese among your containers/bowls.
4. To make the dressing, mix salsa and mayo in a small container. I usually do 75% salsa, 25% mayo.
5. If you’re meal prepping these, add a handful of crushed Tostitos on top right before eating (otherwise they get soggy), then add your dressing and enjoy!
