Crispy Tilkut (Sesame–Jaggery Sweet) –
Homemade crispy Tilkut can be stored for up to 3 months.
Ingredients –
Sesame – 1 cup
Jaggery – 1/2 cup
Sugar- 2 tsf
Water – 1/2 cup
Ghee – 1 tsf
Dryfruits – handful
Key Steps & Method
1. Roasting Sesame Seeds
Take 1 cup sesame seeds (til).
Roast on low flame for 3–4 minutes.
Seeds should crackle and puff up.
Do not over-roast → can become bitter.
2. Preparing Jaggery Syrup
In the same pan add:
1 cup jaggery
2–3 tbsp water
2 tbsp sugar
Melt on low flame.
Sugar is essential for crispy, market-like texture.
3. Testing Syrup Consistency
When jaggery melts and becomes frothy:
Add a little ghee.
Test by dropping syrup into cold water:
It should form a hard, pullable thread (hard ball stage).
4. Adding Lemon Juice
Add juice of half lemon.
Benefits:
Prevents jaggery from hardening too fast
Creates layered, lacy texture
Gives better shine
5. Cooling and Pulling the Jaggery
Pour hot jaggery onto a greased plate / non-stick surface.
Let it cool slightly.
Pull and stretch for 3–4 minutes.
This creates:
Thin layers
Golden shiny appearance
Better texture
6. Mixing Sesame Seeds
Put pulled jaggery back into warm pan.
Add roasted sesame seeds.
Heat gently on low flame for 2–3 minutes.
Mixture becomes cohesive.
7. Pounding the Mixture
Transfer warm mixture to surface.
Pound using pestle or rolling pin.
About 50% sesame seeds should crush → gives perfect texture (mix of powder + whole seeds).
Shaping the Tilkut
Basket Tilkut
Use small box/mould.
Press mixture inside to form base.
Create hollow center using finger.
Shape looks like a small basket.
Simple Round Tilkut
Use steel bowl or mould.
Place mixture and press with rolling pin.
Make round shape with slight center indentation.
Dry Fruit Filling (Optional – for Basket Tilkut)
Preparation
Chop dry fruits:
Cashews
Almonds
Pistachios
Walnuts
Sautéing
Heat little ghee in pan.
Sauté chopped dry fruits for 2 minutes.
Adding Jaggery & Cardamom
Add:
2 tbsp finely chopped jaggery
Pinch of cardamom powder
Cook for another 2 minutes until coated.
Filling
Fill this mixture into Tilkut baskets.
Garnish with chopped pistachios.
Additional Notes
Much cheaper than market Tilkut.
Can be customized with fillings like:
