I never liked soya recipes… until I tried this one, and it completely changed my mind! 😍
This High Protein Soya Chukauni is creamy, spicy, tangy & packed with protein — your perfect comfort bowl that tastes amazing with roti or rice!
🛒 Ingredients:
For the Soya Chunks:
1 cup soya chunks
Hot water (for soaking)
½ tsp salt
½ tsp black pepper
1 tsp Kashmiri red chilli powder
½ tsp turmeric powder
1 tsp lemon juice
1 tsp ginger-garlic paste
1 tbsp oil (for roasting)
For the Chukauni Base:
1 cup thick curd (whisked)
2 tbsp mustard oil
½ tsp rai (mustard seeds)
3–4 garlic cloves (chopped)
1–2 green chillies (chopped)
½ tsp red chilli powder
Salt to taste
For Crunch & Freshness:
1 medium onion (thinly sliced)
Fresh coriander (chopped)
Spring onions (optional)
👩🍳 Method:
Soak soya chunks in hot water for 10–15 minutes, then squeeze and cut into small pieces.
Mix with ginger-garlic paste, spices, salt and lemon. Let it rest for 10 minutes.
Heat oil in a pan and roast the soya chunks until slightly crispy and golden.
Heat mustard oil until smoky, then add rai, garlic and green chilli. Switch off the flame and add red chilli powder.
In a bowl, add curd and mix in the prepared tadka along with roasted soya chunks.
Add onion, coriander and spring onion. Mix gently.
Serve fresh with roti or rice 🤤
💡 Tips:
Soaking is the most important step — make sure the water is hot enough for soft and juicy soya chunks.
Add a little water to the curd base to adjust the consistency if needed.
