Frosted Banana Muffins
3 small mashed bananas
1/3 cup nonfat Greek yogurt
2 eggs
1/4 cup sugar free maple syrup
1/4 cup sweetener of choice (I used monkfruit)
1/4 cup room temp butter
1.5 cups oat flour
1 tsp baking soda
1tsp cinnamon
Pinch salt
Frosting
1/4 cup low fat cottage cheese
1/4 cup nonfat greek yogurt
2 ounces reduced fat cream cheese
1.5 tbsp sugar free cheesecake Jello mix
1.5 tbsp sugar free maple syrup
1 tsp vanilla
1. Pour all frosting ingredients in bowl, mix vigorously and refrigerate
2. Mix wet ingredients together
3. Add in dry ingredients
4. Pour into muffin pan and bake 14-16 minutes 350 or until toothpick clean
5. Let muffins cool completely before adding frosting
Makes 12 muffins, macros/muffin (with frosting)
