HIGH-PROTEIN SALAD RECIPE:

Ingredients:
• Soya Chunks – 1 cup (soaked and boiled)
• Cucumber – 1, diced
• Tomato – 1, chopped
• Onion – 1 small, finely chopped
• Bell Pepper – 1, chopped
• Carrot – 1, julienned
• Corn kernels – 1/2 cup (boiled)
• Lettuce leaves – a handful
• Olives – 1/4 cup (optional)
• Coriander leaves – for garnish
• Lemon juice – 1-2 tbsp
• Olive oil – 1 tbsp
• Salt and pepper – to taste

Prepare the Soya Chunks:
• Soak the soya chunks in hot water for 5-10 minutes.
• Drain the water, rinse, and squeeze out any excess water. Boil them for 5 minutes if you prefer them softer.
2. Chop the Veggies:
• Dice the cucumber, chop the tomato, onion, and bell pepper. Julienne the carrot.
• If you like, you can also toss in some boiled corn and olives.
3. Assemble the Salad:
• In a large mixing bowl, add the soaked and boiled soya chunks.
