In this video, I am sharing 2 quick, healthy and delicious dinner ideas that are perfect for busy days, weight loss, and clean eating.

From an innovative Indian twist to a refreshing global dish, these recipes are packed with protein, flavour, and nutrition without spending hours in the kitchen.

🍽️ What’s on the menu:

🥬 Desi Style Paneer Taco – A fun, low-carb twist where cabbage leaves become your taco shell, filled with a flavourful, protein-rich paneer stuffing. Perfect for those looking for healthy Indian dinner recipes or low carb high protein meals.

🥭 Thai Style High Protein Mango Salad – A refreshing, tangy, and vibrant salad that combines the goodness of seasonal mangoes with a protein boost, ideal for summer dinners and light, nutritious meals.

1)Thai-Inspired Peanut Tofu Salad

Ingredients
Peanuts – 3 tbsp
Sesame oil – 2 tsp
Honey – 1 tsp
Lemon juice – 1 tbsp
Salt and pepper – to taste
Red chillies – 3
Bell pepper – ½ cup (sliced)
English cucumber – 1 (sliced)
Mango – 1 (cubed)
Cherry tomatoes – 5–6 (halved)
Tofu – 200 g

Method
Chop all the vegetables and keep them ready in a large bowl.
Cut the tofu into cubes, season with salt and pepper, and lightly pan-fry for about 1–2 minutes until slightly golden. Set aside.
For the dressing, crush the peanuts using a mortar and pestle.
Add sesame oil, honey, lemon juice, salt, pepper, and chillies. Mix well. Add a little water if needed to adjust consistency.
Pour the dressing over the vegetables and toss well.
Add the pan-fried tofu and gently mix.
Serve fresh.

2)Smoked Paneer Lettuce Tacos

Ingredients
Hung curd – ¼ cup
Salt – to taste
Kashmiri red chilli powder – 1 tsp
Garlic (minced) – 2 tsp
Lime juice – from ½ lime
Paneer – 200 g
Mint-coriander chutney – 3 tbsp
Baby lettuce leaves – as needed
Avocado – cubed
Grated cheese – for topping

Method
In a bowl, mix hung curd, salt, Kashmiri red chilli powder, minced garlic, and lime juice to make a marinade.
Add paneer cubes and coat well. Let it marinate for 10–15 minutes.
Grill or pan-cook the paneer until lightly charred.
For smoking: place a small piece of hot charcoal in a bowl, drizzle a little ghee over it, place it inside the paneer bowl, cover, and let it smoke for 2–3 minutes.
Mix mint-coriander chutney into the leftover marinade to make a spread.
Take baby lettuce leaves, spread the chutney mixture, add smoked paneer, avocado cubes, and top with grated cheese.
Serve immediately.
