Creamy Smothered chicken

Ingredients:
4-6 boneless and skinless chicken thighs
1 tablespoon, olive oil
2 tsps, Smoked paprika
1 tbsp, Garlic powder
2 tsps, Onion powder
1 1/2 tsps, Adobo (all-purpose seasoning)
Salt and black pepper to taste
1/3 cup, sun-dried tomatoes
1 1/2 cups, shredded spinach
3 garlic cloves, minced
10.5 oz can, cream of chicken soup
1 1/2 cups, heavy cream
1 cup, coconut milk
Salt and pepper to taste (for the sauce)

Directions:
1. Add the cleaned boneless-chicken thighs into a bowl. Drizzle olive oil and season with the seasonings listed. Mix very well until the seasoning is fully coated onto the chicken.
2. On medium heat, in a pan sear the chicken on both sides for 2 to 3 minutes.
3. Remove the chicken from the pan and Add the sun-dried tomatoes, spinach, and sauté until the spinach is slightly welted.
4. Next, sauté the garlic into the mixed (sun-dried tomatoes and spinach). Sauté until fragrant/for 30 seconds.
5. Whisk in the canned cream of chicken, heavy cream + coconut milk.
6. Bring the sauce up to a slight simmer and season to taste.
7. Add the chicken thighs back in, cover and simmer for 10-12 minutes.
8. Coat the chicken with the cream sauce and serve while hot.
