These Butter Coriander Bread Bombs are a delicious no-fry snack made with spiced potato stuffing wrapped in bread and cooked in an appe/paniyaram maker. The butter and coriander leaves dressing in the pan gives them a beautiful aroma and crispy texture. Perfect for tea-time or quick evening cravings.
Ingredients
• 4–5 bread slices
• 2 boiled potatoes
• 1 tsp oil
• ½ tsp jeera (cumin seeds)
• 1 tsp ginger garlic paste
• Salt to taste
• ¼ tsp turmeric powder
• ½ tsp black pepper powder
• 2 tbsp coriander leaves (chopped)
• Butter for greasing appe pan
• 1 tbsp coriander leaves for dressing
• Water for soaking bread
Method
1. Heat oil in a pan and add jeera.
2. Add ginger garlic paste and sauté for a few seconds.
3. Add boiled mashed potatoes, salt, turmeric and black pepper powder.
4. Mix well and cook for 2–3 minutes.
5. Add chopped coriander leaves and let the mixture cool.
6. Dip bread slices quickly in water and squeeze gently.
7. Place the potato stuffing in the center and shape into balls.
8. Grease the appe/paniyaram maker with butter and sprinkle coriander leaves in each cavity.
9. Place the bread balls in the cavities and cook on medium flame.
10. Turn occasionally until golden and crispy on all sides.
11. Serve hot with green chutney or ketchup.
