Loaded Vegetable Omelette Bagels

Ingredients
• 2 whole eggs and 2 egg whites
1 bagel
• 3-4 cherry tomatoes
• 1 clove of garlic
• 1 green chilli
• Handful of chestnut mushrooms
• 1-2 spring onions
• Pinch of salt / pepper
• Coriander
• Mozzarella
• Sriracha to drizzle on top

Instructions
1. Drizzle some olive oil in a pan and cook down tomatoes, mushrooms and spring onions in garlic and green chilli, add a pinch of salt.
2. Once vegetables have softened, whisk together eggs and egg whites and add to pan to cover. Flip over omelette to cook and add mozzarella.
3. Place bagels in toaster and toast until half cooked.
4. Cut omelette in half and put one half on each side of the bagel. Drizzle with sriracha and enjoy
