Ingredients:
-2.5 lbs Chicken Breast, Raw & Skinless (1134g)
-2.5 Cups Jasmine Rice, Dry (500g)
-1 Cup Chicken Broth (240mL)
-4 tsp Minced Garlic (20g)
-1 Small Onion, Diced
-1 Cup Sun-Dried Tomatoes, Chopped (125g)
-2 Cups Baby Spinach (60g)
-2 Cups Grated Parmesan Cheese (200g)
-1.5 Tbsp Italian Seasoning
-1 Tbsp Paprika
-1 Tbsp Garlic Powder
-1 tsp Chili Flakes
-Salt & Black Pepper
Sauce:
-1 Cup 2% Cottage Cheese (200g)
-1 Cup 0% Greek Yogurt (240g)
-2–4 Tbsp Chicken Broth (taken from the crockpot)
-1 tsp Onion Powder
-1 tsp Garlic Powder
-1 tsp Chili Flakes

Instructions:
1.) Add chicken, broth, and seasonings to crockpot; cook on high 3–4 hrs or low 6–8 hrs.
2.) Cook rice and set aside.
3.) Blend sauce ingredients with a little broth until smooth.
4.) Shred chicken, then stir in sauce, parmesan, and spinach; cook 5–10 minutes until thickened.
5.) Divide into 8 servings with rice and store or serve.
