Ingredients:
• 2 Large Zucchinis (grated)
• 1 cup Chickpea Flour (Besan)
• Cheese of choice (cubes or slices for that pull!)
• Salt (to taste)
• Optional: Pepper, garlic powder, or herbs.
Instructions:
1. Grate the Zucchini: Grate your zucchinis into a large bowl.
2. Save the Nutrients: Do NOT squeeze the liquid out! That water is packed with all the vitamins and minerals from the zucchini. We want to keep all that goodness inside the waffle, not down the sink.
3. Mix: Add the chickpea flour and salt directly to the wet zucchini. The flour will naturally absorb all those nutrient-rich juices to form your batter.
4. The Secret Center: Place half a scoop of batter into a hot, greased waffle maker. Add a cheese cube/slice in the center, then top with the rest of the batter.
5. Waffle It: Close and cook until golden and crispy (usually 5–7 minutes).
