Protein Buttermilk Pancakes
Dry ingredients
• 30 g unflavored whey protein powder
• 30 g unflavored Casein protein powder
• 1 tsp sugar
• Dash salt
• .5 tsp baking soda
• 80 g self rising flour
• 15 g Buttermilk powder
Wet ingredients
• 5 tbs water
• 250 nonfat greek yogurt
• 3 Tbs butter (42 g melted)
• 2 eggs
Directions
1. In a medium bowl whisk together Dry ingredients
2. In a separate bowl whisk together the Wet ingredients, do the butter last and slowly pour while whisking to prevent it from solidifying
3. Whisk the dry ingredients into the Wet ingredients
4. (For a slightly thinner batter, use 6 Tbs water instead of 5)
5. Allow batter to sit for 5 minutes for protein powder to absorb moisture
6. Bring a Nonstick Pan to medium-low heat
7. Lightly spray the pan
8. Use a .25 cup measuring spoon to portion Pancakes (I prefer a 2 ounce ice cream scoop)
9. Makes about 8 full pancakes, and a little extra
