This gluten-free recipe combines vibrant color, smooth texture and subtle fennel aroma for a balanced, nutritious meal that’s ready in minutes.

Ingredients:
• 400 g green peas
• 3–4 potatoes
• 2 tbsp olive oil
• Salt and pepper to taste
• Salmon fillet
• Fennel seeds (freshly crushed in a mortar)

Instructions:
1. Cook the peas for about 7 minutes, then cool them quickly in cold water to preserve their color.
2. Boil the chopped potatoes for 15-20 minutes until tender.
3. Combine peas and potatoes, add olive oil, salt and pepper, then blend until smooth.
4. Sprinkle the salmon with crushed fennel seeds and sear it naturally until golden.
5. Serve the salmon on top of the mash and garnish with fresh herbs.
