Ingredients:
-2 lbs Lean Ground Beef (96/4) (907g)
-12 Large Eggs (600g)
-1.5 Cups Liquid Egg Whites (360g)
-12 Low Carb Burrito Tortillas
-1 Pack Center Cut Bacon (12 oz / 340g)
-2 Cups Reduced-Fat Mexican Style Cheese, Shredded (226g)
-1 Cup Dry White Rice (180g)
-1 Medium Yellow Onion (200g)
-1 Red Bell Pepper (150g)
-1 (15 oz) Can Black Beans, Drained & Rinsed (240g)
-1 (15 oz) Can Corn, Drained (250g)
-1 Cup 0% Greek Yogurt (240g)
-1 Packet Taco Seasoning
Instructions:
1.) Dice onion + pepper; cook rice.
2.) Cook chopped bacon until crispy, set aside.
3.) Cook beef, onion + pepper; add seasoning, then stir in beans + corn.
4.) Add eggs and cook until set.
5.) Mix in rice + bacon, then stir in yogurt + cheese until creamy.
6.) Divide into 12 tortillas and wrap.
7.) Optional: crisp 1–2 min/side; store or freeze and reheat.
