Cookies for Breakfast? 🍪✨
Yes, when they’re this clean. These are healthy, filling, and actually easy to throw together. The perfect “worth repeating” recipe for busy mornings! 🌱
Ingredients
• 2 cups quick oats (or rolled oats)
• 1 cup almond, peanut, or sunflower seed butter
• 1/4 cup ground flaxseed
• 1/2 cup mashed banana (approx. 1 large an ripe)
• 1/3 cup applesauce 🍎
• 1/4 cup pure maple syrup (or honey)
• 1/4 cup hemp seeds ✨
• 1 tsp ground cinnamon
• 1/2 tsp salt
Instructions
1️⃣ Prep: Preheat oven to 325°F. Line a baking sheet with parchment paper.
2️⃣ Mix: Combine everything in a large bowl. Mix until you have a thick, heavy dough.
3️⃣ Scoop: Portion 1/4 cup mounds onto the sheets. Use a spoon to flatten them into cookie shapes (they won’t spread while baking!).
4️⃣ Bake: Bake for 20 minutes until edges are lightly browned.
5️⃣ Cool: Let them set on the pan for 10 mins.
Storage: Keep at room temp for 5 days or in the fridge for up to 8. The easiest grab-and-go fuel! ☁️
Make it even better: Try a quick homemade applesauce! Simmer 1 chopped Honeycrisp in a little water until soft, then mash. Leaving it chunky = better flavor. 🥣
Quick tip: This dough is sticky! Optionally a stand mixer or just use your hands to get it perfectly combined.
