The Wellness Kitchen at the Salem Health Community Health Education Center cooks up some yummy low-fat Cilantro Tomatillo and Blue Cheese dressings.

CILANTRO TOMATILLO DRESSING (adapted from Gina’s Weight Watcher Recipes)
Start to Finish: 15 minutes, Serves 7

Ingredients:
1/2 cup low-fat buttermilk
1/4 cup light mayonnaise
1/4 cup fat-free Greek yogurt
1 small jalapeno, seeds removed, leave them in if you want it spicy
1/4 cup of fresh cilantro
1 tomatillo, husks removed, chopped
1 clove garlic
1 scallion
Juice of 1/2 lime
1/2 teaspoon dried parsley flakes
1/8 teaspoon cumin
1/4 teaspoon fresh ground pepper
1/4 teaspoon salt

Directions:
In a blender, combine all ingredients. Blend until creamy.

LOW-FAT CREAMY BLUE CHEESE DRESSING (adapted from Gina’s Weight Watcher Recipes)
Start to Finish: 10 minutes, Servings: 8

Ingredients:
1/2 cup crumbled blue cheese
6 ounces fat-free Greek yogurt
1 tablespoon light mayonnaise
1 tablespoon lemon juice
1 tablespoon white wine vinegar
1/8 teaspoon garlic powder
Salt and freshly ground black pepper

Directions:
In a small bowl, mash blue cheese and yogurt together with a fork. Stir in mayonnaise, lemon juice, vinegar, and garlic powder until well blended. Season to taste with salt and pepper.
