Ingredients
• 3 bananas
• 2 eggs
• 1/3 cup apple puree
• 1/4 cup yogurt
• 1/4 cup maple syrup
• 1 tsp vanilla extract
• 1 tbsp oil
• 1 1/4 cups whole wheat flour
• 1/4 cup cocoa powder
• 1 1/4 tsp baking powder
• 1/2 tsp baking soda
• 1/4 tsp salt
Method
• In a bowl, whisk together the flour, cocoa powder, baking powder, baking soda, salt and set it aside.
• Mash the bananas until smooth.
• Whisk egg. Add the mashed bananas, apple puree, yogurt, maple syrup, and oil. Whisk well.
• Fold in the dry ingredients until well combined. Let the batter rest for 10 minutes.
• Transfer the batter into lined muffin molds, filling them almost to the top. Use large cupcake liners for jumbo bakery-style muffins.
• Bake in a preheated oven at 425°F for 5 minutes, then reduce the temperature to 350°F and bake for 13–17 minutes without opening the oven.
• Allow the muffins to cool slightly, then top with melted chocolate and your favorite toppings ❤️
