Hey guys!

I thought it would be fun to share with you some of our dinner ideas for the last week! I am almost 24 weeks pregnant and my body is slowly letting me eat a few more veggies! My family is trying to eat healthier together! Because I was so sick for my first and most of my second trimester we all started getting in the habit of eating junk food:( Now we are getting back to where we used to be and taking our health back! Here are the recipes for each meal listed below if you are interested in trying them yourselves! HAPPY COOKING!

CHILI CHEESE DOGS:

1/2 pound cooked ground bison, lean ground beef, or lean ground turkey (calories will change if beef or turkey is used)
1 twelve ounce can of Chili
1 package of hot dogs, meatless sausages, or bratwursts (whatever you prefer)
1 cup of Mozzarella cheese for topping

-Mix cooked bison together with can of chili, then cook hot dogs or sausages to liking, place chili on top of hot dogs or sausages and top with mozzarella cheese

CREAMY TOMATO SOUP :

One 32 oz box of Hunts Tomato Soup
Salt and pepper to taste
Garlic and Herb to taste (1 TB)
Italian Seasoning to taste (1 TB)
Basil 1 tsp
2-4 TB of Heavy Cream (Depends on how creamy you like it)

-Mix everything together in a pot on the stove and heat to temperature of your choice

CHEESE BREAD:

4 slices of Dave’s Killer Bread
1/2 cup mozzarella cheese
4 TB of Boursin Cheese Spread

-Turn oven to a low broil. Put 1 TB of Boursin cheese spread on each piece of bread then top each slice with 1/8th cup of mozzarella cheese. Place cheese bread slices on a pan and put under broiler until cheese is melted and lightly browned.

EXTRA LEAN MEXICAN ENCHILADAS:

1 pound of ground buffalo, beef or turkey
1 -12 ounce salsa
1 12 oz can of red enchilada sauce
1 medium onion, finely chopped
1 tsp cumin
1/4 tsp cayenne pepper
1/2 teaspoon black pepper
1/2 tsp sea salt
1 cup reduced fat cheddar or mozzarella cheese
6 corn tortillas

-Preheat the oven to 375 degrees F.
-Over medium heat saute the ground meat until fully cooked through. Drain any fat and combine salsa, onion, cumin, cayenne pepper, black pepper, and salt.
-Using a 9x 13 in pan, divide the meat mixture up into the 6 corn tortilla shells and roll each tortilla up. Drizzle the red enchilada sauce over the corn tortillas and sprinkle with cheese. Cover with foil and bake for 30 minutes. Remove foil and bake an additional 5 minutes until cheese is bubbly and lightly browned.
-If desired, serve with Greek yogurt, sour cream, avocado, tomato or shredded lettuce. Ive tried all of them and it is so good! You won’t go wrong!

BUTTERNUT SQUASH WAFFLES:

1 1/2 cups cooked pureed butternut squash (can use baby food for time saver)
2 cups almond milk
3/4 cup coconut oil (melted)
2 eggs
1 tsp vanilla
2 TB maple syrup
1 1/2 cup whole wheat flour
1/2 cup buckwheat flour
1 TB baking powder
1/4 tsp salt
1 1/2 tsp cinnamon
1/4 tsp ginger
1/4 tsp cloves
1/4 tsp nutmeg

-Combine in a medium to large bowl, squash, almond milk, coconut oil, eggs, vanilla and maple syrup. Thoroughly combine.
-In a separate bowl combine both flours, baking powder, salt, cinnamon, ginger, cloves and nutmeg. Thoroughly combine.
-Mix wet and dry ingredients together. Do not over mix.
-Spread about 3/4 cup of batter over a hot waffle iron and cook for 2-3 minutes, or util the waffles is golden brown on both sides. Finish doing the same thing with the rest of the batter!
-Enjoy, use whatever toppings you prefer!

BAKED POTATO WITH CHILI:

– 4 potato’s cooked in oven at 350 Degree F for 45 minutes or until a fork inserted is tender.
– I can of Chili of choice
– 1/2 cup mozzarella cheese or cheese of choice
– sour cream or preferred choice of toppings
