Ingredients (makes 2 sandwiches)

* 4 eggs
* 2 tbsp light mayonnaise
* 2 tbsp plain Greek yogurt
* 1 tsp Dijon mustard
* 1 tsp lemon juice
* Salt and black pepper
* 1 tbsp chopped chives or spring onion
* 4 slices wholegrain bread
* Lettuce, spinach, cucumber, or tomato slices

Optional add-ins:

* ½ avocado, mashed
* Paprika or chilli flakes
* Celery for crunch

Method

1. Boil the eggs for about 9–10 minutes.
2. Cool, peel, and chop them.
3. In a bowl, mix mayo, Greek yogurt, mustard, lemon juice, salt, and pepper.
4. Fold in the chopped eggs and herbs.
5. Toast the bread if you like extra texture.
6. Layer greens and vegetables onto the bread, then spoon over the egg mixture.
7. Close the sandwich and serve.
