Hello my loves!
Today I am sharing one of my favorite recipes with you! Banana Pecan Protein Muffins! I love to eat these after a workout or for breakfast. I keep them in the fridge and just pop them in the microwave right before eating. Enjoy!
Ingredients List:
-3 cups/270g oats
-4 scoops/80g of vanilla protein powder
-1 teaspoon of baking powder
-1 teaspoon of Ceylon cinnamon
-2 eggs
-1 teaspoon vanilla extract
-1/2 cup/125g unsweetened apple sauce
-1/2cup/125g 0% fat greek yogurt
-5 tablespoons of coconut oil
-4 tablespoons of Erythritol
-1 cup/250ml unsweetened almond milk
-6oz/170g Bananas
-12 teaspoons/40g chopped Pecan nuts
Procedure:
1. Preheat the oven to 350 Fahrenheit/175 Celsius.
2. Add all the dry ingredients together (oats, vanilla protein powder, baking powder, cinnamon) and mix.
3. In a separate bowl, add all the wet ingredients together (eggs, vanilla extract, apple sauce, greek yogurt, coconut oil, erythritol (not wet), almond milk.
4. Now slowly add the wet ingredients into the dry ones while mixing.
5. Scoop batter into muffin tin with muffin papers.
6. Top with bananas and pecans.
7. Bake for 15-20 minutes.
8. Let the muffins cool in the tin for about 20 minutes.
