Ingredients:
2 cups oatmeal
5 Medjool dates
1/2 cup raisins
1/2 cup pecans or walnuts
2 eggs
1 cup plain yogurt
3 tablespoons avocado oil
1 teaspoon baking powder
Pinch of salt
1 large carrot, coarsely chopped
1 apple, chopped

Blend the oatmeal, dates, raisins, and pecans as fine as possible. Add eggs, yogurt, avocado oil, baking powder, and salt, then blend again. Pour into a bowl. Chop the carrot and apple in the same food processor, then mix them into the batter. Pour into a bread pan and bake at 350°F for about 70 minutes.
