This vibrant salad packs a serious crunch with sweet corn and green bell peppers, balanced by the fresh bite of cilantro.
Instead of a heavy mayo base, we dressed it in a sharp Dijon vinaigrette and folded in rich, creamy cottage cheese. It’s light, high-protein, and pairs perfectly with just about any grilled main. Fast, macro-friendly, and absolutely delicious.
Here is the Recipe:
– For the Salad –
Sweet Corn 2-3 ears of fresh corn or 2-3 cups of thawed frozen corn. (I used 400g)
Green Bell Pepper 1 medium, finely diced (60-80g)
Cottage Cheese: 2Tbsp (~40G)
Cilantro: 2Tbsp finely chopped
– For the Dijon Vinaigrette –
Olive Oil 4Tbsp
Cider Vinegar 2Tbsp
Dijon 1tsp
Cilantro Seed 1/2tsp
Salt&Pepper to taste
