Ema Datshi creamy Eggs Omelette
Eggs in a creamy cheesy sauce is a great breakfast. High in protein. It will keep you healthy, fit and full. Perfect for brunch , lunch or even dinner !!

1. 1-2 tablespoons butter
2. 3 garlic sliced
3. 1-2 green chili or jalapeño sliced
4. 3 slices mozzarella
5. 1/4 – 1/3 cup hot water
6. 3-4 eggs
7. Salt and black pepper
8. Chili oil
1. Add a tablespoon of butter to a pan on medium low heat.
2. Add the garlic and green chili and sauté for about a minute
3. Add some hot water – not too much
4. Add in the cheese slices and a pat of butter and stir to create a sauce – it may not melt . Even if cheese separates from the water don’t worry. Just add in the eggs
5. Season with salt
6. When water boils carefully crack in the eggs.
7. The water will cook the eggs . Cooking until all the water is absorbed.
8. Cook a few minutes and the eggs will settle into a creamy sauce.
9. Drizzle chili oil and serve with toast.
