6 fresh eggs
7 green scallions, chopped
3 garlic cloves, diced
½ teaspoon olive oil
Dark soy sauce, to taste
Black pepper, to taste
1–2 cups cooked black rice (serve on the side or mix in)

🍳 Directions

Heat the olive oil in a pan over medium heat.

Sauté the diced garlic for about 30 seconds until fragrant.

Add the chopped green scallions and cook for 1–2 minutes.

Beat the eggs and pour them into the pan.

Gently scramble until the eggs are cooked to your liking.

Season with black pepper and drizzle in dark soy sauce to taste.
