Here’s a little video with some ideas for how to use up leftover vegetables in your breakfasts. Food waste is a huge environmental issue, and to combat this I have been trying to be inventive about using up food that is going a bit funky, or is leftover from other recipes. So here are 3 ideas, enjoy!

Vegan Omelette recipe:
1 cup chickpea/gram flour
1 flax egg (1tbsp flaxseed with 3 tbsp water)
Salt & pepper to taste
1 tbsp nutritional yeast
1/4 tsp each of turmeric, garlic powder, baking powder, cumin powder
3 tbsp vegan yoghurt
1 1/4 cup water
