Ingredients:
1 cup coconut milk (full fat for creaminess)
3 tablespoons chia seeds
1 tablespoon honey
1 cup frozen mango chunks

Instructions:
1.In a bowl or jar, stir together coconut milk, chia seeds, and honey until well combined.
2.Cover and reirigerate overnight (at least
6 hours) to let the chia seeds absorb the liquid and thicken.
3.In the morning, transfer the chia pudding and irozen mango chunks to a blender. Blend until smooth and creamy.
4. Serve immediately, garnished with extra mango or a sprinkle of toasted coconut if desired.
