Try this traditional Khuringdo (Jungli Chaulai) Moong Dal recipe. Green leafy vegetables provide iron and folate, while moong dal adds protein, making it a wholesome and nutritious meal.
Recipe:
100 g Jungli Chaulai (Khuringdo)
½ cup soaked moong dal
1 onion
1 tomato
Garlic
1 tsp oil
Basic spices (turmeric, red chilli powder, coriander powder, salt)
Method:
Boil 100 g Jungli Chaulai and squeeze out the excess water.
Heat oil and prepare a tadka with garlic, onion, tomato and basic spices.
Add the soaked moong dal and pressure cook for 2–3 whistles.
Add the squeezed leafy greens, mix well, simmer for 2–3 minutes and serve hot.
Enjoy with roti or steamed rice.
